These 100% Buckwheat Noodles are organic and gluten-free. Despite its name, buckwheat contains no wheat, instead it’s a seed related to rhubarb and sorrel. King Soba's buckwheat flour is made with hulled buckwheat kernels. The only part not used is the outer shell husk which can be hard on the digestive system (usually used for filling pillows and mattresses). These noodles are steamed and air dried to maintain the purity.
For best results, rinse under cold water as soon as noodles are done cooking - this will keep them from sticking together.
